Banana Bread/Cake

1/2 cup margarine
1 cup granulated sugar
2 eggs
3 mashed bananas (very ripe)
2 cups flour (I use whole wheat)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup chocolate chips

Cream margarine and sugar together. Beat in eggs. Mix in mashed bananas. Mix in baking soda, baking powder, salt and flour. Stir in chocolate chips. pour into greased loaf pan or 8 X 8 cake pan. Bake at 325° F. for about 1 hour or until inserted toothpick comes out clean.

• Tip: If you have bananas but no time to bake banana bread, remove the peels, put bananas in a bag, and freeze them until you have the time. When thawed, the bananas are dark and mushy – perfect for banana bread.

Cinnamon Apple Toast (Bread Machine Recipe)

1 1/3 cups applesauce
2 eggs
1 1/2 tsp salt
3 tbsp sugar
2 tbsp vegetable oil
1 1/2 cups whole wheat flour
2 cups all-purpose flour
3/4 cup quick cooking oatmeal
1 1/2 tsp bread machine yeast

Measure ingredients into baking pan. Select Whole Wheat Cycle. (makes a 2 lb loaf)

Slice when finished bread is cool. Toast in toaster and spread with margarine. Sprinkle with granulated sugar and cinnamon. Cut in triangles and serve.

Pumpkin Pie Bars

1 box yellow (golden) cake mix
1/2 cup melted butter or margarine
3 eggs
3 cups pumpkin
2/3 cup milk
1/4 cup white sugar
1 teaspoon cinnamon
1/4 cup butter or margarine

Preaheat oven to 350°F. Grease 9 X 13 pan. Pour one cup of yellow cake mix into a medium size mixing bowl and set aside. Combine remaining cake mix, 1/2 cup melted butter and 1 egg; mix well. Press into pan. Combine pumpkin, 2 eggs and milk in a medium size mixing bowl, mix until smooth. Pour evenly over crust in the 9 X 13 pan. Pour the sugar and cinnamon into the mixing bowl containing the 1 cup of yellow cake mix. Cut in the butter until the mixture looks crumbly. Sprinkle this mixture over the pumpkin filling. Bake for 50-60 minutes or until a knife inserted into the bars comes out clean. Let cool before cutting.
